  1. Add the oil to your hot Dutch Oven (DO). Brown the sausage. When the sausage is browned add the onions and cook for a few minutes. Add the peppers and cook until they start to soften, stirring occasionally. Add the potatoes and beer, salt pepper to taste. Cover and cook with about 8-10 coals on bottom and maybe 12 or so on top. Cook approximately 45 minutes.
Recipe Notes

Any dark beer will work, I had an old stout so I used it. My coals were burning down so¬† I covered the top with them because they weren’t super hot. Fresh coals burn hotter and I would have liked the potatoes and sausage to brown a little more.
